Nigel Slater’s clams, wide beans and fettuccine recipe

Cook 300g of huge beans in boiling water for five minutes until smooth, then drain. Slip the beans from their skins. Pod 150g peas.

Cook 150g of fettuccine in a deep saucepan of boiling water till tender, then drain. Melt 20g of butter in a massive pan. Peel and weigh down two garlic cloves, then upload 700g of washed clams, podded peas, 100ml of white vermouth, and Noilly Prat. Cover with a lid and bring to the boil.

Let the clams cook dinner for three minutes or until their shells open. Remove the lid, upload the drained fettuccine, the large beans, and 40g of butter. Chop a small bunch of parsley and add to the pan. Shake the entirety together and pile it into dishes, then spoon the cooking liquor and serve it with bread. Enough for two.
The trick

A fresh and wholesome clam is usually tightly closed. If the shell is open, tap it firmly on the facet of the sink. If it doesn’t happen straight away, then discard it.
